Stripping coffee beans of their stimulating qualities without affecting their flavor is a true art mastered by few. But in the Chiapas region of southern Mexico, they clearly know what they're doing. For some time now, farmers in the region have been dedicated to removing caffeine from coffee beans. And with success.
The essence of this removal? Crystal-clear mountain water. By treating the green beans with spring water at over 1200 meters above sea level after harvest, they manage to dissolve the caffeine. Without a single additive. This ensures that the balanced flavor of the bean is not lost during the decaffeination process. What remains is a delicious cup of coffee with sweet notes of hazelnut, roasted almond, and sugarcane. The perfect dessert coffee to enjoy all day long.

We're hopelessly in love with coffee and the endless array of flavors it brings. We scour the world for the finest beans, searching for what's truly special. Always with respect for the farmer, the planet, and authentic flavor.
Selecting the right coffee beans requires the time and attention of our roasters and beankeepers. Together with head roaster Pieter Claes, they determine which coffee beans we like to serve to our guests.
The Roastery
All our coffee beans are freshly roasted weekly at The Roastery, in the heart of Leuven. Here, we inspect the quality of the green beans, roast fully electric, cup to refine the flavor palette, and package and ship the coffee to you and our bars.
You can visit The Roastery from Monday to Saturday for a coffee, advice on the right coffee machine, or for one of our lab workshops.
