From leaf to powder
Besides quality, the processing method also plays a major role. To optimally preserve flavor and nutrients, the young tea leaves are carefully steamed, dried, and traditionally ground in stone mills. This slow grinding process prevents heat buildup and preserves the smooth, umami-rich flavor that characterizes good matcha.
By whisking the powder thoroughly in hot water, you drink the entire leaf, providing more natural nutrients than regular green tea. The result is a creamy, balanced drink with a subtle sweetness and a pleasantly smooth finish.
